It is that time of year when fruit in the garden starts the transition from green to finished colour. With chilli peppers this can be a bit confusing with some of the change in colour looking unhealthy. Chilli peppers move through a range of colours as they ripen on the vine. As long as the fruit remains solid it is safe to say it is healthy and on its way.
Chilli peppers can be considered in three groups. There are the non-hot peppers that are slightly spicy but do not burn. They suit salad use and regular simple use in cooking. Then there are the hotter peppers that are best suited to general cooking and making hot sauces. Finally there are the downright dangerous chilli’s, such as paper lantern, used in small quantities to make very hot sauces.
